Mornings with a toddler feel like running a mini marathon — no warm-up, no breaks, just a full-speed dash from the moment we wake up.
Today kicked off with pancakes, but not your average ones. I decided to get a bit creative and made mini banana pancakes. I sliced bananas into little round coins, dipped each one into pancake batter, and cooked them up like tiny banana fritters. They turned out so soft and sweet, with the banana practically melting inside the pancake — absolutely delicious! I'm definitely taking credit for this genius mom move! π
For myself, I kept it straightforward — just regular pancakes made with flour, eggs, and mashed bananas. No sugar needed. Quick, easy, and tasty enough to eat cold if I have to (because let’s face it, that’s usually the case).
As always, my little guy was perched in his learning tower, watching me like a tiny kitchen supervisor. He takes his job very seriously — pointing, babbling, and sometimes demanding a bite before anything’s even ready.
We didn’t sit down to eat, as usual. He won’t wait for me to set the table anymore, so breakfast has turned into a standing buffet. It’s a mess, yes — but also kind of a vibe. π
So yes, it’s exhausting. Every morning feels like a sprint. But in between the banana bites and the kitchen chaos, there are those tiny golden moments that remind me: this is the good stuff.
